When bees finish filling a cell, they seal it with a thin lid of fresh wax. Before we can extract, that wax capping has to come off, and as it does a small amount of honey runs out with it and collects in the cappings tray.
It's a by-product of the harvest rather than a batch we set out to produce. There's never much of it, and because it comes off every frame we uncap that day, it carries honey from more than one of our apiaries.
Cappings honey is by its nature a mix of whatever was on the uncapping table, which makes it the only jar in our range where we can't tell you exactly which meadow it came from.
What we can tell you is that every drop of it came from our own hives in the New Forest, harvested by us, in the same season.
Limited Edition
The label is a collaboration with JamJar Edit, featuring pressed flowers and original artwork by Emma Noble. It's a limited run, so get it before it's gone!
Raw New Forest Honey
Nothing is done to this honey between the hive and the jar except coarse straining to take out bits of wax. It is never heated, never pasteurised, never fine-filtered. No additives, no syrups, nothing.
Heat and fine filtration strip out the pollen and aromatic compounds that give honey its character. Cappings honey in particular comes straight off the wax, about as close to the comb as honey gets.
Awards
Our New Forest honey has won multiple Great Taste awards, including a three-star award in 2023 - the only British honey producer to receive one that year. We're also a certified New Forest Marque producer, which means everything is grown, produced and packed within the New Forest.

Looking after it
Raw honey crystallises over time. It's a sign the honey hasn't been processed, not a fault. Stand the jar in warm water below 40°C and it will turn runny again. Store at room temperature, out of direct sunlight.
