For a few weeks in late summer the New Forest heath turns purple, and that's the only window there is. We move hives out onto the open heathland to catch it, and what comes back is nothing like the wildflower honey from our meadow and woodland sites - darker, thicker, and with a flavour people either fall for completely or find far too much.
What is heather honey?
Heather honey is thixotropic. It sets to a jelly in the comb and won't spin out in an extractor like normal honey does - shake it or stir it and it briefly turns liquid again, then sets straight back.
The only way to get it out is to press the comb, which we do in an apple press. That's slower, messier and yields less than extracting any other honey we produce. It's also why you may find small traces of pollen, propolis and beeswax in the jar (it's meant to be there).
One harvest a year
There's no second crop. When the heather stops flowering, that's the year done. This is the honey our customers ask us to tell them about the moment it's back in stock, and it rarely lasts long!
Raw Heather Honey
Nothing is done to this honey between the press and the jar. It is never heated, never pasteurised, never fine-filtered, never blended with anything. No additives, no syrups, nothing.
Heat and fine filtration strip out the pollen and aromatic compounds that give honey its character and its traceability. Honey with the pollen removed can't be traced back to where it was made. Ours can - to the heathland of a National Park.
Awards
Our New Forest honey has won multiple Great Taste awards, including a three-star award in 2023 - the only British honey producer to receive one that year. We're also a certified New Forest Marque producer, which means everything is grown, produced and packed within the New Forest.

Looking after it
Heather honey behaves differently to the rest of our range. It's naturally thick and gel-like, and it firms up further over time - stir it and it loosens again. Store at room temperature, out of direct sunlight.
